A lot of VN (visual novel, choose-your-own-adventure styled illustrated novel video games) companies are like that. PC Eroge releases that get adapted into non-adult releases for PS* games and anime/manga. The Nanoha series were spun off from a PC eroge (Nanoha was just a background side character, for those people who worry). Even fetish nukige ("fap-specialized" game filled with many adult scenes) series like Taimanin get "safe for work"(-ish) releases too sometimes.
Type/Moon just happens to be one of those who hit it big enough to go permanently "mainstream".
Quite a few manga artists and some influential people in the anime industry (e.g. directors, screenwriters, seiyuu, etc.) also started off doing eroge or erodoujins, or do eroge/erodoujins as side gigs while doing mainstream work. Akamatsu Ken did erodoujin of Cardcaptor Sakura, CLAMP did yaoi doujins of Saint Seiya, and Hirano Kouta's Hellsing series was originally an original hentai manga called "The Legend of the Vampire Hunter" or something (and incorporates characters from Hirano's other hentai works). The Urobutcher also started off as a writer for Nitroplus eroge.
Even Tezuka Osamu the granddaddy of manga and anime (AKA Japanese Walt Disney) did furry porn on the side.

In another sense, the VNs for Fate had to have ero scenes in it - at the time of its release (and even more for Tsukihime), it was the expectation that any VN would have sex in it because that's what makes it a VN. The concept of an 'all ages VN' wasn't really a thing until fairly recently, all things considered. ("If you wanted to do that why didn't you just do a manga or regular novel" was the viewpoint) This is also a reason why the sex scenes in TM works are both esoteric and perfunctory. ('this chair' and all that other business)
